Roasted Smoked Salmon
The Roast Smoked Salmon is an interesting variation from the traditionally Smoked Salmon. This method is also known as hot smoking. Very succulent! In general terms hot smoked fish is flaky whilst cold smoked fish is firmer and sliceable. Chunky slices cut across the fish look wonderful on the plate. Great in a salad with asparagus.

Gravad Lax
salmon which is not smoked but brined and marinated in dill - the dish originates in Scandinavia where it is often used as a special supper dish. It is a product that is gaining in popularity and is great as a starter with some cucumber salad, bread and warm potato salad. Also good on oatcakes with a bit of garnish. The picture shows Organic Gravad Lax which is slightly mellower than the traditional product.
